Zucchini Galore
Between the pattypan squash and zucchini coming from my garden, I’m going to have a freezer full of it! I’ve been putting away about three or four bags every day just from the “normal-sized” fruits. I plan to use those in stir-fries and soups throughout the year.
Then there are the ones that hide beneath the leaves until they’ve turned into baseball bats! I’m shredding those to use later in breads and muffins.
Of course, growing the vegetables is only half the work. Between gardening, weeding, watering, harvesting, and then preserving everything, I’ve been up past 11:00 most evenings trying to keep up with it all. Thankfully, I absolutely love my FoodSaver for vacuum-sealing everything for the freezer!
